How many veggies can I eat in a day?

So I've decided to start eating the way I ate from like april to september/october of 2008. I didn't eat any sugars (except from fruit-- no chocolate, cake, goodies). I ate a gazillion vegetables, cut the carbs in half and upped my protein. I felt so healthy and so good. I've decided I should go back to that because not only did I feel good, my skin looked good too! So this is my.. 5th (?) day eating that way again.
I think it's good for anyone to eat this way. My doctor explained that when you don't give your body the things it needs to function on a daily basis, it steals it from somewhere in your body. So your body is going to get what it needs whether you give it to it or not! So for example, if you don't give your body the protein it needs, your body will steal it from your heart and make your heart weak. Or, if you don't give your body enough calcium, your body will steal it from your bones and make your bones brittle over time. I knew this before, but it never really hit me until he explained it to me like that.
